Cauliflower Soup with Black Truffle Oil Recipe

Ingredients (approx. 4-6 servings)

  • 2 Heads Cauliflower
  • 1 Small Onion & 1 Celery Stalk or 1 Large Leek
  • 2-3 Tablespoon Grapeseed Oil (can use Olive Oil)
  • 1-2 Tablespoons Butter (can omit)
  • 3-4 cups Chicken or Vegetable Broth
  • Salt & Pepper
  • Black Truffle Olive Oil *found at Trader Joe’s
  • Sea Salt Crunchy Bean


  • Chop onion, celery and leek
  • Saute onions & celery or leeks in bottom of large sauce pan with oil & butter (approx. 5 min) to allow onions to become translucent
  • Add in chopped cauliflower
  • Add in stock or broth
  • Add in salt & pepper
  • Stir and bring to a boil for a few minutes and then bring to a simmer until cauliflower is soft (approx. 20 minutes)
  • Take off heat & use blender or immersion blender to get to a consistency of your choice
  • Drizzle with Oil
  • Top with Crunchy Bean Snack of your choice!
