½ Head Cabbage, shredded (3-4 cups)
2 Green Onions, white and green parts chopped
¼ Cup Extra Virgin Olive Oil
2 Tablespoons Plain Yogurt
Juice from 1 medium Lemon, 2 tablespoons
½ – 1 teaspoon salt
1 Package Ranch or Sea Salt Crunchy Bean Snacks
Combine shredded cabbage and green onions in a large serving bowl.
Next, whisk together olive oil, plain yogurt, lemon juice, and salt. Pour over cabbage mixture. Add crunchy bean snacks and stir until everything is well coated.
Allow to sit in your fridge for 30 minutes for the flavor to really kick in.
If you want to add more color, shredded carrots make a beautiful contrast to red or green cabbage. Leftovers store well in the refrigerator for three days.by
